Stiltwalker

A very easy drinking beer on the border between pale ale and IPA. Gently bitter and packed with juicy, tropical fruit flavors this beer is balanced by a touch of malty sweetness, smooth rich body (from local oats) then punctuated by a crisp dry - slightly tart - finish.

As homebrewers, this recipe was always our canvas for exploring hops with tropical fruity flavors because the yeast we use pumps out tropical (pineapple) and fruit (peach) flavors of its own. The yeast also works through a huge temperature range so it changes depending on how hot it gets and continues to slowly alter flavors as the beer matures – even at cellar temperatures.
