Originally a small batch riff on Mantello to demonstrate the profound impact of yeast on flavor, we finally made a full batch of this classic German Hefeweizen, with 100% Connecticut grown & malted grains! The star of the show is spelt; an ancient form of wheat with a flavor profile halfway between typical wheat and rye. It’s all grown & malted just a few miles down the road at Thrall Family Malt
