Tepache is a spontaneously fermented beverage which makes use of the pineapple skin. Along with sugar, spices, and a few habaneros; the usually discarded outer peel of the pineapple is transformed - thru alchemy - into a refreshing tangy, sweet and slightly spicy beverage. Ever since we made one, we’ve been trying to work the concept into a beer recipe. This Prova is another experiment in better understanding how the flavors of Tepache intermingle when re-fermented with brewers yeast as part of a beer.
