We fondly remember “Winter Warmers” - richer, bolder, boozier and often “Christmas Spice” laden brews which offer some gentle warming on the inside as days turn colder. So we whipped up a recipe for a full-bodied, easy-drinking, malt-forward, amber-honey-colored, multi-hyphenate Christmas beer. We’ve selected the “Dunkles Bock” style which is just a slightly darker variant of the standard bock template with layers of malt sweetness, toasty bread crust and subtle fruity character from a very small addition of melanoidin and caramel malt. There is a wisp of cinnamon on the finish for a dusting of holiday spirit, but make no mistake this is NOT a heavily spiced beer. You might not even notice it if I hadn’t said anything.
