Prova #11, Batch 2
We think Plum is often overlooked. It is not a bold flavor, but instead mimics notes from many familiar fruits: we get aromas and flavors that remind us of cherries, grapes and blackberries. We were hoping the Beligan yeast would provide bold peppery spice but instead we found the fruit had softened those charecteristics. So we added them back with an extra dose of orange peel & cinnamon. The result is part sangria, part wine, part beer and very delicious.
